INGREDIENTS:
-
3 boneless, skinless chicken breasts, patted dry
-
½ tbsp taco seasoning
-
1 cup red enchilada sauce
-
14 oz refried beans (about 12 heaping scoops)
-
8 oz cream cheese, softened
-
1 tbsp taco seasoning (for mix)
-
Whites of 3 green onions, chopped
-
4 oz mild or hot green chilis, drained
-
1 tbsp enchilada sauce (for the mix)
-
1 oz shredded Colby-Jack cheese (for the mix)
-
7 oz shredded Colby-Jack cheese (for the top)
-
¼ cup chopped red onion (garnish)
-
¼ cup chopped green onion tops (garnish)
-
12 oz bag of Klein Bros. Spicy Texas Trash, crushed slightly for topping

INSTRUCTIONS:
-
Molten Center Prep — Preheat oven to 400ºF. Rub taco seasoning all over your chicken. Let it chill on the counter for a few minutes while you build the rest.
-
Layer up the flavor — Pour enchilada sauce into the bottom of a baking dish. Scoop in refried beans in little clouds. Lay seasoned chicken breasts right on top.
-
Whip the creamy mix — In a bowl, blend softened cream cheese, extra taco seasoning, green onion whites, green chilis, enchilada sauce, and 1 oz of cheese. Mix until smooth and rich.
-
Stack it tall — Smear the cream cheese mix on top of each chicken breast. Sprinkle red onions around the dish like confetti.
-
Cheese it like you mean it — Cover each breast with 7 oz of shredded Colby-Jack. Then sprinkle a small handful of Klein Bros. Spicy Texas Trash right over the cheese for crunch and heat.
