Zesty Black Eyed Peas

INGREDIENTS:

  • 1 (15 oz) can Black Eyed Peas (or 1½ cups cooked fresh Black Eyed Peas)

  • 1 cup Klein Bros. Texas Caviar

  • 1 Tbsp Butter or Olive Oil (optional, for richness)

  • Salt & Pepper, to taste

  • Optional: Fresh Chopped Parsley or Green Onions for garnish


INSTRUCTIONS:

  • Heat It Up — In a medium saucepan, warm the black eyed peas over medium heat. If using canned, drain and rinse them first.

  • Add the Zing — Stir in 1 cup of Klein Bros. Texas Caviar. Let the flavors mingle and simmer for 5–7 minutes, stirring occasionally.

  • Finish It Off — Add a pat of butter or a drizzle of olive oil if desired. Season with salt and pepper to taste.

  • Serve It Southern — Garnish with chopped parsley or green onions. Serve warm with ham, pork chops, or your favorite Southern-style entrée.
