
Klein Bros. Molten Magic
Indulge in a rich Texan twist on a classic dessert with this Molten Lava Cake made with Klein Bros. Chocolate Covered Pecans.
Each bite blends gooey chocolate fudge with a nutty crunch—perfect for celebrations or sweet cravings.
Ingredients
For the cake batter (makes 4–6 ramekins):

½ cup (115 g) unsalted butter

6 oz (170 g) dark chocolate, chopped

2 large eggs

2 large egg yolks
-
¼ cup (50 g) granulated sugar

⅛ tsp salt

2 tbsp all-purpose flour

1 tsp vanilla extract

½ cup chopped Klein Bros. Chocolate Covered Pecans
For the molten center (fudge filling):

½ cup (120 ml) heavy cream

4 oz (115 g) bittersweet or dark chocolate (60–70% cocoa), chopped

2 tbsp unsalted butter
-
1 tbsp light corn syrup (optional)
Optional toppings:

Powdered sugar

Vanilla ice cream or whipped cream

Instructions
Molten Center Prep

Heat cream until steaming.

Add chopped chocolate, butter, and corn syrup. Stir until smooth.

Chill in a shallow dish for 2 hours, then scoop into 6 small balls and freeze until solid.
Cake Batter

Preheat oven to 425°F (220°C). Grease and flour 4–6 ramekins.

Melt butter and chocolate together until smooth. Set aside to cool slightly.

In a separate bowl, whisk eggs, yolks, sugar, salt, and vanilla until pale and fluffy.

Fold chocolate mixture into the eggs.

Sift in flour and stir just until combined.

Fold in chopped Klein Bros. Chocolate Covered Pecans.

Assemble the Cakes

Spoon batter halfway into ramekins.

Place a frozen fudge ball in the center.

Cover with more batter until ¾ full.

Tap ramekins gently to settle.
Bake

Bake for 11–13 minutes, until edges are set and center still jiggles slightly.

Rest 1 minute, then invert onto plates or serve straight from ramekins.
